Roast Chicken Breasts for Use in Recipes

Whenever a recipe calls for cooked chicken, this is my go to method. Yes of course you can buy a rotisserie chicken to use as a time saver, but it costs more and it doesn’t taste nearly as good as what you can make yourself. Whenever you have time, cook up a bunch of chicken & prep (shred some and dice some, store in separate bags) and freeze.

What makes a big difference in the end result of this roast chicken is using our family spice mix. If you don’t have time to create a batch of this spice mix, you should still roast chicken in this method for use in recipes. Just season very generously with kosher salt, black pepper and whatever else you like (garlic powder, onion powder, chili powder, smoked paprika).

INGREDIENTS

4 Bone-in, skin-on chicken breast halves

Olive oil

4 tablespoons Family Spice Mix OR kosher salt, black pepper and seasonings of your choice

Note: 4 large breasts should yield about 6 cups cooked chicken

Directions

Rinse chicken and dry well with paper towel. Place chicken breasts on sheet pan skin side up and rub with olive oil. Season GENEROUSLY with family spice mix (or salt & pepper). Roast at 375 degrees for 35 minutes (depends on size of your breasts – temperature should register 165 degrees).

Cool chicken, remove skin, take off bone and shred or dice, depending on how you want to use it in your recipe.
