Greek Salad

I love Greek salad and make it frequently, especially in Spring and Summer. Friends and family would ask for the recipe and I really didn’t have one. One day I took the time to measure ingredients and put a little extra thought into bringing this salad together and then wrote it all down so it could be shared.

It is especially good with my lemon mustard vinaigrette.

INGREDIENTS

One or Two large heads of romaine lettuce (depending on the size), washed, dried & torn into bite size pieces -

½ cup pitted Kalamata olives, halved

2 Tablespoons of drained capers

1 cup of grape tomatoes, halved

½ cup of peeled & sliced seedless cucumber

¼ cup thin slices of red onion (soak slices in ice water for 15 minutes and then drain before using, they will have a milder flavor)

¾ cup of feta cheese, crumbled

Directions

Place all salad ingredients in large bowl. Toss with dressing just before serving. Taste and adjust for salt and pepper if needed.
